In 1996 Chef Wayne Hooker entered the Springfield food market and took it by storm with the opening of Chef Wayne’s Big Mamou on Liberty Street by introducing Cajun inspired cuisine. He had a vision to bring something new, different, and interesting to the restaurant scene of New England. Now, 23 years later, Chef Wayne saw an opportunity to serve an underserved market in Springfield and surrounding communities through take-out and delivery. With this idea in mind, Chef Wayne began his search for a prime location and like-minded partners.

In July 2019, Chef Wayne joined forces with Chef Ivan Felix and Dr. Lisa Wyatt to open Chef Wayne’s Big Mamou: Cajun on the Go in the parking lot of 350 Worthington St, transforming 205 square feet into a take-out and delivery kitchen.

The location, affectionately known as “the hut” continues the Big Mamou tradition of serving Cajun inspired cuisine with the addition of house made smoked meat dishes. The Cajun on the Go menu is designed with the lunch and early dinner crowd in mind - building on the convenience of delivery through Grubhub and the staff at the hut. Chef Wayne Hooker

Chef Wayne Hooker is the founder, owner and culinary inspiration for Chef Wayne’s Big Mamou located at 63 Liberty Street, Springfield, MA 1996. At that time Chef Wayne realized that of all the culinary experiences offered in Springfield and the surrounding communities, Cajun cuisine was not on the list. For 23 years, The Big Mamou has been a destination for many offering made to order Cajun inspired dishes that have been featured on The Phantom Gourmet, profiled in U.S. Airways Magazine and the comic strip “Nancy”, and local newspapers. Chef Wayne has appeared in local television broadcasts and can be seen on You Tube. Chef Wayne has received every accolade the region can offer for his work as a Chef, and restaurateur. The Big Mamou appears as #1 in the lower pioneer valley – based on customer reviews and feedback – on yelp and trip advisor. Chef Wayne is no stranger to business start-ups, having been co-owner and head chef to several other successful eateries including but not limited to The Big Mamou in Williamsburg, MA., Simply Southern, Hartford, CT, Pioneer Brew Pub, The Hungry Pelican – just to name a few. His newest venture, Cajun on the Go will allow him to build on the success, branding, and reputation for food quality and consistency he created with The Big Mamou adding new twist to the menu and again, finding an underserved niche in the food take-out and delivery market. Chef Ivan Felix brings more than 15 years of experience as a cook, food and beverage director, and caterer to Cajun on the Go, ensuring everything coming from the stove and the smoker is perfectly seasoned, well cured, and mouthwatering.

Dr. Lisa Wyatt

Dr. Lisa Wyatt is the operations wizard keeping Cajun on the Go and Chef Wayne’s Big Mamou humming like well-oiled (and delicious!) machines, applying her experience with strategic and fiscal planning, management, and marketing, and flavoring her business experience with a certificate in pastry and baking from Boston’s Le Cordon Blue.
